Bruce's cooking career started at age 17, as a Chef's apprentice in Racine, Wisconsin, where he worked under a German, a Swiss, and a Cajun chef from New Orleans. Bruce cooked his way through the University of Wisconsin, Madison earning a degree in English and Sociology.
Upon graduation he moved to New Orleans to study law at Tulane University. He got sidetracked working as a Chef for the Marriott Hotel and managing the Peppermill Restaurant. He then moved to Florida and opened a Creole-Cajun restaurant in Clearwater. From there he moved to Sarasota's Charley's Crab on St. Armand's circle where he worked as a manager of the restaurant and Charley's "Craberet" nightclub.
Over the last 25 years Bruce has cooked and managed at various clubs and restaurants in the Sarasota area. He is a member of the Florida Restaurant Association, and helped develop the "Taste of Sarasota" food festival, benefiting "All Faith's Food Bank."
He has hosted and cooked for many "Chaine des Rotisseurs", "Taste de Vin", and "Vin de Noble" dinners over the years. His specialties are classical European, "Eclectic" and New Orleans cuisine. He also hosts a monthly "Gourmet wine dinner" and cooking show. |
