Over the last 40 years I have worked as a chef or manager in over 25 restaurants and clubs. During this time i have taught countless people how to cook everything from fast food to fine dining. I have put on over 100 cooking shows and classes in different venues.

Years ago, my wife prodded me to put together the recipes from my cooking classes and shows that were easy to make, so she could make them in my absence. The working title of the book was "Bruce's Eclectic Bistro Cookbook." My wife used the book frequently, but not how you would think. On my days off, she went through the cookbook and picked out what she wanted me to cook for dinner. Isn't that convenient?

When I compiled over 180 recipes and it was time to go to print the logical title became "The Chef's Wife's Cookbook." Every wife should have one. A chef I mean. for those who don't, here's the book.

I’m lucky that I like to cook. I find most restaurants these days are disappointing and expensive. If I order one of my favorite dishes in a restaurant and they screw it up, I end up making the very same thing at home on my next day off. Call me jaded, because I am. You get spoiled in this business. I've worked with some of the best chef's around and once you become accustomed to the best, it's almost impossible to be satisfied with anything less.

My only gripe is “the rule” at my house. You see, we don't have a dishwasher, and when my wife does cook, I should be so grateful that I don’t have to cook, that I should happily do the dishes. Catch-22. Why don't I buy a dishwasher? My wife thinks they are a waste of water for two people, and there is no room for one in the kitchen. I tend to agree, but I put it at the top of my Xmas list every year. Come on Santa. I hope you enjoy the recipes. Bon appetite!
